Winemaking Notes
The grapes for this wine were destemmed and pressed immediately upon arrival to the winery. The juice was cold settled for 72 hours then fermented at cool temperatures (12-13C) using selected yeast strains. A small portion of the juice was fermented at warmer temperatures in neutral French oak to help add structure and texture to the final wine. After fermentation the wine was kept on lees with scheduled battonage (lees stirring) until just prior to final blending. The wine did not undergo malo-lactic fermentation, in order to preserve the tremendous fresh aromas and lively acidity. After protein and cold stabilization the finished wine was filtered before bottling. Fielding Vineyard and Zuzek Vineyard.

Tasting Notes
Fresh aromas of lemon zest, savory and fresh cut grass integrated on the nose with notes of wet stone and tarragon. Lively acidity on the palate with flavours of lemon drops and gooseberry, followed by a long finish.
